After an especially rough few days with the smoke, we finally have some blue sky-ish days here in Sacramento after a month of haziness. Wherever you are, I hope you catch a breath of fresh air.

Can you tell what’s different about these cookies? Would you guess they are made with homemade ube halaya, coconut oil, and gluten-free flours? I tasked myself with developing a vegan and gluten-free chocolate chip cookie recipe for an allergen-free baking class with recipe developer/food stylist Jeffrey Larsen. The first pass at this recipe had less than desirable results (flat, oily little puddles), but I’ll be tweaking this one this next week. The challenge seems to be, to become a better baker (and recipe developer), convert a recipe to allergen free. Challenge accepted.
